These vegan chocolate chip cookies will just melt away in your mouth!
They are chewy on the inside and crunchy on the outside.
Now it’s time to make your cookie dreams come true.
Substitutions
You could add some cocoa into the cookie recipe, to give you vegan DOUBLE chocolate chop cookies.
Instead of chocolate you could add peanut butter. Yum. Would give you added protein and ‘good fats’ too!
You could try replacing some the flour with ground oatmeal, this adds a little more flavor.

Ok, I hold my hands up. I can’t exactly call these little beauties ‘healthy.’
BUT, they are cookies. NO-ONE says I want to be super healthy today and then grabs the first cookie they see, that’s not the purpose of eating cookies. Cookies are treats.
Let’s take the wins where we can get them. These cookies are dairy free. That’s a good start. They are also only 88 calories per cookie, so you could happily eat two in a day and it wouldn’t impact on anything.

Method
This vegan cookie recipe is pretty easy. These are VEGAN cookies! So more than ever, just enjoy making them and get into the cookie spirit.
Do not over cook your cookies. A light browning when they come out of the oven is enough, otherwise they may go hard rather than chewy after cooling. For best results cook on the middle rack of the oven.
These cookies are great as they are, BUT if you’re looking to go one step further and keep the kids occupied a little longer then why not decorate your cookies? Sprinkles, colored sugar or icing can all add some extra sparkle to your day.

Top Tip
If you are not eating them all straight out of the oven and need to keep them for a few days, store in a plastic air tight container to retain chewiness. If you have one, store with half a piece of bread.
Also it’s best to eat them within 2-3 days, before they start to lose their amazingness.
PLANT-BASED FOOD MADE SIMPLE

Ingredients
8 oz or 1 x cup vegan margarine
1/2 x cup brown sugar
1/2 x cup white sugar
1/4 x cup almond or cashew nut milk
1 x tsp vanilla extract
2 1/4 x cups flour
1/2 x tsp Himalayan pink salt
1 x tsp baking soda
12 oz dairy-free chocolate bar
Directions
1. Preheat oven to 250°F
2. Grab a large mixing bowl and add the vegan butter, brown sugar and white sugar. Stir in all together until creamy, fluffy and soft
3. Add to bowl the nut milk and vanilla extract and stir in
4. Then place in the bowl flour, salt, baking soda and mix until a cookie dough has formed
5. With your chocolate bar break it up in the packaging into different sized pieces, shape of pieces doesn’t matter. Then add the chocolate to the mix and stir in
6. On a large baking dish lay out parchment paper and scoop cookie mixture into balls and place on the paper. Flatten slightly with spoon or palm of your hand
7. Place in the oven for 10 minutes and bake until golden brown, keep an eye to ensure they don’t burn
8. Place cookies on baking rack to cool for 20 minutes
9. Once cookies have cooled (or even while they are cooling!), serve and enjoy! Yum!
