I would say that these are a great addition if you’re hosting friends or family, but honestly, you don’t need to have people coming over to make these worthwhile. Even if they are just for you they are 100% worth the time for the yumminess!

The thing about these kale chips as that they are incredibly moorish and delicious AND they are healthy.

They do come with a warning though…

It’s likely that it is likely you will eat them all from the baking tray before they make it to a serving dish!

Substitutions

If you like spicy food, then grab the chilli flakes and add some when you add the nutritional yeast.

If you have vegan parmesan then this can be used in place of nutritional yeast.

Feel free to customize with herbs and spices. Some ideas to try could be cayenne pepper, garlic or avocado oil.

Oh kale, you old dear friend of mine.

Kale is the holy grail of all-things plant-based nutrition.

For this reason, I can’t get enough of the stuff. It’s low calorie, has it’s own unique yummy taste and is like magic for your body.

Nutritionally speaking, you are WINNING with this recipe. There is so much plant-based goodness on one plate!

If you had to make a list of the top ten things to eat frequently that your body would like, this would certainly be on it.

This yummy snack is rich in fiber, protein, vitamin C, calcium, vitamin K and B vitamins.

According to Healthline, calcium plays several important roles for healthy teeth and bones. In the bloodstream it is also good for sending nerve signals, releasing hormones like insulin and is even good for your muscles.

Vitamin C reduces the risk of chronic diseases and boosts antioxidant levels and immunity.

This snack is LOADED with B vitamins. These are wonderful for your cell growth, energy levels, good eyesight, healthy brain function and for good digestion.

According to Harvard, vitamin K helps to make various proteins that are needed for blood clotting and the building of bones. It is found throughout the body including the liver, brain, heart, pancreas, and bone.

Method

When you’re separating the kale from the stems, on way to do this to maximize the amount of kale is to cut almost down the stems longways to split the leaves off. It’s also faster than plucking them off.

When placing the kale mixture onto a baking tray, be sure to spread it out and not have kale overlapping, this will ensure each piece has the room to cook as it should and is important for your crispiness factor!

Top Tip

Kale chips are all about the crispiness! I had to go through a few attempts before cracking it. It’s important not to use too much oil. Less is more. If your kale isn’t wet with oil when it comes out of the oven, then you should find you will have optimum crispiness.

Easy Vegan Cheesy Kale Chips

Serves: 2
Cuisine: American

Prep time: 10 mins
Cooking time: 45 mins

Ingredients

1 x bundle of fresh kale

1 x tbsp of extra virgin olive oil

2 x tbsp nutritional yeast

1 x pinch of pink Himalayan sea salt

Directions

  1. Preheat oven to 225°F
  2. Rinse kale through and dry off

  3. Tear kale into smallish pieces and remove and throw away any stems

  4. Add kale to a large mixing bowl

  5. Throw in extra virgin olive oil, nutritional yeast and sea salt and mix all together

  6. Lay out contents of bowl onto a baking tray covered with aluminium foil and spread evenly

  7. Bake for 2o minutes, ensure to keep watching as it can tend to burn quickly

  8. Remove from oven cool for 3 minutes to allow for crispiness

  9. Serve and enjoy!
