True to their name, these cookies are super easy, they are tasty too! There really is noting quite like a delicious cookie, whatever type of cookie it is. They are just heaven!

This recipe has that certain special something about them, I can’t quite put my finger on it, but perhaps it’s a great combination of the ingredients.

Another great thing about this cookie recipe is that you only really need around 5 ingredients. Easy peasy.

Substitutions

For where it says nut butters, feel free to use peanut, almond or hazelnut butter. All of them taste delicious in these cookies. My only recommendation would be to choose one that’s 100% nut butter. That means one with no added nasties for ingredients.

For pure maple syrup, you can easily substitute this for agave syrup, will still work.

If you don’t have cocoa powder, but you do have dark chocolate chips, worry not my cookie-making-friends. You can swap out the cocoa powder and instead mix in the chocolate chips.

I’ll be honest. I’m not usually a calorie counter. But maybe when it comes to sweet treats I do keep an eye on the stats. Just to be sure. I love these cookies because they taste so good but they are only 126 calories each. You can have two and still feel like you haven’t even eaten anything bad, even though they are a treat. Yay to that.

The cocoa powder is derived from beans, they contain hefty quantities of natural antioxidants called flavonoids. The researchers found natural cocoa contains the highest capacity of the antioxidant procyanidin. Antioxidants are thought to be effective in helping to prevent cancer, heart disease, and stroke.

Quick, easy and simple. As they have few ingredients, they are a pleasure to make. I’ve included some pics for you so that you can see the kind of textures to go for at the mixing stages!

Top Tip

If you have them, use old fashioned whole rolled oats. The results will guarantee a much more chewy and substantial texture. If you use quick oats, it’s probable the cookies won’t feel the same quality.

Super Easy Vegan Oat Chocolate Cookies

Cookies: 20
Cuisine: American

Prep time: 15 mins
Cooking time: 15 mins

Ingredients

2 x tbsp ground flax or chia

120 ml / ½ x cup pure maple syrup or other liquid sweetener

60 ml / ¼ x cup 100% nut butter

4 tbsp / ¼ x cup cacao powder

180 g / 2 x cups jumbo rolled oats (GF-certified for a GF version)

1 x pinch of Himalayan Sea Salt

Directions

1. Preheat the oven to 355° F and lay out a large baking tray and cover with parchment paper.

2. In a small bowl, add 2 tbsp of water to the ground up flax or chia seed and set aside in the fridge for 5 minutes.

3. Grab a large mixing bowl and mix together maple syrup and nut butter and stir until blended.

4. Add in flax seeds that you have prepared together with the cacao powder. Mix until blended.

5. Add in the rolled oats and salt and stir in all together.

6. Place cookie sized and shaped mounds onto the baking tray, ensure there is space between each cookie.

7. Place in oven for around 15 minutes. Remove from oven, cookies will be soft but that is okay. After around 10-15 mins transfer to a cooling rack or plate. They can be delicate when still hot so use a spatular.

8. Serve and enjoy!

9. If you would like to store them, it’s best to use an airtight container and they are good for around 3 days.
