Perfect vegan nachos recipe party food! Make these nachos with vegan queso that ALL will CRAVE and RAVE about after!
All together, it’s a taste sensation of nachos, salsa, guacamole, black beans and of course the cheeeeeeese. Nom nom.
SO good for party or snack food, but don’t rule these out for a top notch vegan dinner or vegan lunch.
There are SO MANY different flavors going on and the vegan cheese is completely irresistible.
The dish is crazy easy to make.
Method
For soaking the cashews for this vegan nachos recipe, I normally like to leave them at least overnight, if not 24 hours. But sometimes it’s tough to plan ahead, I’m the worst at it. Sometimes I’ll soak cashews and then the next day I’ve changed my mind on what I want to cook. Then what? Then it’s a cashew catastrophe. Cashewatrophe. I’ll stop there.
Anyways.
I have another idea. I only started recently doing it and it’s a game changer, for me anyway. Instead of soaking you can try this.
Place a small pan of water on the heat and add the cashews, wait for the water to reach boiling point and take away from the heat. Leave the water and cashews to cool on the side for 15 minutes. If you have one, also squeeze half a lemon adding the juice to the pan at boiling point. The lemon is meant to soften the cashews.
I want to be upfront with you about something. These don’t keep very well. They go all soggy and floppy after a while. There’s only one thing you can do to prevent this, just make sure everyone eats them all. Sorry not sorry.
You can also heat up the chips, toast them. Be really careful not to burn them otherwise they go bad and taste like charcoal. To heat them up, place chips on a baking tray and in a preheated oven on broil for ten minutes.
Vegan Nutrition Info
In theory, this should be not all that good for you. It kinda falls into the ‘naughty food’ category.
BUT, we aren’t talking about a dairy cheese and high in saturated fats nacho nutritional nightmare. We are talking about nachos with plant-based cheese.
This means these nachos are HEALTHY!
It is legit party time!
It is a bit high in saturated fats, but some of this is ‘good’ fats from the guac. It’s still hight in protein, fiber and vitamins.
It’s choc-full of B vitamins, vitamin C and magnesium!
So hand me the tortilla chips please!

Substitutions
This vegan nachos recipe is the ultimate dish for swapping in and out toppings.
Instead of black beans, think of your other beany options. Pinto beans or refried beans will also hit the spot.
You can also add quinoa, dill pickles or even strawberries!
You can buy tortilla chips and keep life easy, or you can make your own! Cut a tortilla into 8 pieces and bake in the oven for around 5 minutes on 350°F. Adding spices or flavorings as you like.

Top Tip
Wear your sombrero!
Just kidding. Unfortunately.
The real top tip is to make sure you fully prepare all of the ingredients and put them to one side before you start making the queso cheese or adding any toppings directly to the tortilla chips. Once the toppings are ready, chill in the fridge while you are making the cheese and/or baking the chips.
Nachos With LEGENDARY Vegan Queso Cheese
Serves: 4

Ingredients
8 x cups of tortilla chips
2 x cups of black beans, drained and rinsed
1 x cup chunky salsa
2 x sliced fresh jalepenos
4 x cherry tomatoes chopped up
2 x sprigs of cilantro
Hot sauce *optional
For The Cheese
1 x cup raw cashews, soaked overnight, drained and rinsed
4 x tbsp nutritional yeast
1 x clove garlic, peeled and minced
1 x pinch sea salt
1 x pinch chilli powder
1/2 tsp cumin
2 x cups of water
For The Guacamole
2 x ripe avocados
2 cloves garlic, peeled and minced
1/4 of red onion, finely chopped
2 x fresh limes squeezed for juice
2 x sprigs of cilantro. leaves picked off
1 x pinch of Himalayan sea salt
Directions
1. Firstly make the guacamole. Add all of the ingredients to a mixing bowl, mash with a fork and mix with a spoon. Place bowl in fridge to cool the guac.
2. Time to make the queso vegan cheese, add all of the ingredients into a blender and mix until smooth, add to a sauce pan and heat until a on a very slow simmer, add water if required, nutritional yeast for cheesy-ness, if too thin then keep stirring until it thickens up.
3. Place nacho chips on a serving platter, top with salsa and black beans. Then add the warmed cheese and place the chilled guac as the top. For further toppings add black beans, sliced jalapeños, chopped cilantro for decoration and the chopped up cherry tomatoes.
4. Serve immediately and enjoy!
