Let’s talk about the most important thing here – crispiness!

For extra crispiness ensure that your potatoes and asparagus have ample space in the baking dish. You need the amount of oil I said, don’s scrimp on oil, otherwise they’ll be no crisp. Ensure the potatoes are properly covered with oil, only half covering their skins just won’t cut it.

New potatoes when you’re about to cook them should be firm, smooth and free of cracks or any soft brown spots.

Before you set upon making your delicious potatoes it can be good to give them some tlc. Rinse under cool water, scrub with a vegetable brush and cut away greenish parts if you have any.

Top Tip

When the potatoes come out of the oven, consider lightly pressing down on them with the back of a fork under the skins crack and add some vegan butter on top of them. It just makes them look pretty but it’s also fun to do.

Crispy Smashed New Potatoes With Garlic, Rosemary And Asparagus

Serves: 4

Prep time: 5 mins
Cooking time: 35 mins

Ingredients

1 x kg of new potatoes

1 x 250g of asparagus tips, sliced into two halves

2 x tbsp extra virgin olive oil

2 x garlic cloves, peeled and minced

1 x tbsp dried rosemary

1 x pinch of Himalayan Sea Salt

1 x pinch pepper

Directions

  1. Preheat oven to 390 °F
  2. In a large mixing bowl, add the potatoes, olive oil, garlic, rosemary, sea salt and pepper. Stir/toss so that it all mixes together
  3. Place aluminium foil on a large tray, dull side up, and place the potatoes bowl mix on the foil, ensuring to spread evenly and give the potatoes some space in-between (this space adds to crispy-factor)
  4. Place in the oven for 20 minutes
  5. After 20 minutes remove from over and turn over potatoes, add the asparagus and a drizzle of oil to cover them too
  6. Cook for a further 15 mins
  7. Remove from oven and serve and enjoy whilst hot!
